Sure, a BLT is simple enough. It is just crispy bacon, lettuce, and tomato, right? Well, the secret to this easy lunch recipe is the tangy sauce that transforms an ordinary BLT Wrap into something crave-worthy!

Ingredients & Substitutions

  • Low carb tortilla wrap- Low carb wraps have the best texture for these BLTs, but you can substitute a flour tortilla or wrap.
  • Beefsteak tomatoes- You can substitute another vine-ripened or heirloom tomato. Locally grown, in-season tomatoes will always taste WAY better than typical grocery store tomatoes you buy the rest of the year because they have time to ripen on the vine and develop more flavor. Grocery store tomatoes and picked green for transportation and artificially ripened before proper flavor develops.
  • Bacon - The best bacon to use for a BLT is thick-cut bacon, in my humble opinion. You want its crisp, meaty, presence to take center stage in each bite! However, regular bacon or even turkey bacon can be substituted.
  • Shredded iceberg lettuce- Romaine lettuce leaves can be substituted.
  • Extra virgin olive oil
  • Red wine vinegar - Balsamic vinegar can be substituted.
  • Salt and black pepper
  • Mayonnaise

How to make it

Cook bacon in a large skillet over medium heat until crispy. Cut the fresh tomatoes into thick slices while the bacon cooks.

Tomato cutting tip: It is best to use a serrated blade to slice a tomato. The teeth on the blade will tear through the tomato skin more easily, ensuring you do not have to press down and squish the tomato with each slice. A bread knife actually works very well for this.

Place the tomatoes in a large dish and brush each side with a mixture of olive oil, red wine vinegar, salt, and black pepper.

In a small bowl, combine mayonnaise and one tablespoon of the olive oil mixture, including any pooling tomato juices.

Assemble your BLT wraps by spreading the mayonnaise sauce onto the wrap and top with lettuce, three strips of bacon, and slices of tomato. Then roll the wrap shut and serve.

Ingredients

  • 4 wraps (I recommend low carb wraps)
  • 3 beefsteak tomatoes (sliced thick)
  • 12 strips bacon
  • ¾ cup shredded lettuce (lettuce leaf can be substituted)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • salt and black pepper to taste
  • ¼ cup mayo

Instructions

  • Fry bacon in a skillet until crispy.

  • While bacon is cooking, cut tomato slices in half lengthwise and add to a large dish with olive oil, red wine vinegar, salt, and black pepper. Turn tomatoes and brush each side with the mixture to ensure full coverage.

  • Add mayo to a small dish and drain 1 tablespoon of the tomato basting mixture (olive oil, red wine vinegar, & tomato juices) into the mayo and stir to combine.

Assembly

  • Open wrap on a plate and smear 1 tablespoon of the mayo mixture onto wrap. Top with lettuce, 3 strips of bacon, and 3 tomato slices.

  • Roll wrap to close and serve.

Notes

Leftover ingredients should be stored separately each in their own airtight container and assembled whenever you wish to enjoy another wrap.

Absolutely love this recipe. I’ve made them twice since finding the recipe in March. The tomato juice added to the mayonnaise give it an extra boost of flavor.

Delicious. Didn’t know BLTs could get any better. Adding the tomato juices to the mayonnaise added another level of flavor. Using wraps instead of bread was a great addition. Had these two days in a row, probably going for three.
